Seriously, who doesn’t love pancakes!

I decided this morning to have something for breakfast other than the to-die-for french toasts. So I decided to make pancakes. I usually make delicious pancakes from my recipe book,but today i was feeling adventurous: I tried a new recipe from a website that I won’t mention here because the recipe turned out disastrous… A total FAILURE! Come on, who adds 2 eggs and 3 tablespoons of baking powder and no sugar for a pancake mix! Well, I should’ve known better…
So, I got out my recipe book and started preparing for those yummy pancakes… and to satisfy my adventurous urge , I added blueberries and ricotta cheese in the mix
So, here’s what you need to make 13-15 pancakes:
- 2 cups flour
- 1/2 cup sugar
- pinch of salt
- 1 tsp baking powder
- 1/2 tsp fast yeast
- 1 1/4 cup of milk. ( I use powder milk for a richer taste )
- 2 tbsp ricotta cheese ( optional )
- blueberries ( optional, if yes, then as much as you want )
And here’s what you need to do :
- In a large bowl, sift together the flour, baking powder,yeast, salt and sugar.
- Make a well in the center and pour in the milk, and ricotta cheese; mix until smooth.
- Once mix is smooth, add the blueberries
- Heat a lightly oiled or buttered frying pan over medium high heat. Pour or scoop the batter onto the pan, using approximately 1/4 cup for each pancake.
- Brown on both sides and serve hot with honey, maple syrup or jam
A sinful 5 minute breakfast!

I just put my tandoori chicken in the oven, so I figured i’d share what I had for breakfast this morning… For a while, I’ve been trying recipes for french toast, but none seemed to turn out perfect. So, I woke up this morning and decided to make french toast without digging up any recipes, and to my surprise, it turned out d-e-l-i-c-i-o-u-s!!! Not that I am bragging, but it really was great.. Now that I am writing about it, I am actually thinking of having a third one, *gulp*!
So, here’s what you need:
- 1 egg
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg (optional)
- 1 tsp sugar
- 2 tbsp milk
- Banana slices
- Peanut butter
- Strawberry jam
- Toast ( I prefer milk toast )
And, here’s what you need to do:
- Mix egg, milk, sugar, cinnamon and nutmeg
- spread peanut butter on one layer of toast, jam on the other and put banana slices then place 2 layers on top of each other
- dip both sides of the sandwich in the egg mix
- Butter a pan, fry both sides until gold-brown
